Compost Cookies

Various versions of this cookie recipe are making the rounds this year.   This is one person’s guess as to what compost cookies should be.

Compost Cookies

  • 1 ½ sticks of butter
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 2 Tablespoons used dry coffee grounds
  •  1 egg
  • 1 teaspoon vanilla
  •  1 cup rolled oats
  • 1 cup flour
  • ¾ cup rough crushed potato chips
  • ½ cup rough crushed pretzels
  • ½ cup rough crushed Fritos
  • ½ cup peanut butter chips
  • ½ cup chocolate chips
  • 1 teaspoon baking powder

 Preheat oven to 350 degrees.  Cream together the butter, sugars, coffee.  Add the egg and vanilla.  Mix the dry ingredients separately and then add to the wet and combine briefly until just mixed.  Shape dough into 2 inch balls and bake on an ungreased cookie sheet 10-12 minutes.  Allow to set up for two minutes  after removing from the oven.  Transfer to wire cooling racks.
